Flight Catering Design
Projeto para Catering Aereo
This paper will discuss how a complex and precise system of preparation of meals can assure the quality of them to serve in the aircrafts. The companies that prepare the meals are called flight caterings or comissaria in Portuguese. They adapt the foodservice production to the peculiarities of the aviation world, where the item safety is fundamental. The meals deserve special attention because an alimentary intoxication may represent situations of emergency. In order to avoid the crossed contamination produced by different types of food inside the caterings’ production, the designs must follow international norms called HACCP (Hazard Analysis Critical Control Points). These norms show some location rules so that such areas can determine a lineal flow of production. A catering enterprise must be strategically located in the airport complex, once the airports demand a precise attendance of flights’ on time and others procedures. Therefore, the waste removal and food supply should be done quickly while the aircrafts stay at the airport for a very short period. The planning of flight caterings is a must in order to understand how an airport should be organized. This is an important tool for professionals that design airports with efficiency.
